If you’re looking for a quick and easy mid week meal to feed the family then you need to try this Sheet Pan Kofte.
I absolutely love traditional kofte but when you’re in a rush it can feel like a bit of a faff having to add the meat to skewers.
But with this method it all gets cooked on a baking tray, saving so much time!

How To Make Sheet Pan Kofte
For this recipe I used 5% fat beef mince. A lower fat mince works better, otherwise the fat that comes off the meat when cooking has nowhere to go, and it will pool underneath.

- Mix the beef mince in a bowl with finely chopped red onion, pepper and some herbs and spices.

- Transfer to a lined baking tray and press the mixture in. I used a 33cm x 23cm tray.

- Use a knife to cut it into 8 even strips.

- Then score each of the strips diagonally.
Bake in the oven for 12 minutes. The next step isn’t essential, but if you prefer a crispier top of the kofte then you can also put it under the grill for another 2 minutes.

Garlic Sauce
Whilst the kofte is cooking, mix together greek yogurt, dried parsley and garlic powder for a really simple but delicious garlic sauce.
The kofte is then ready to serve up with flatbreads and any salad items that you like.

Serving To Kids
I know that this kind of meal can be tricky for some kids to eat; everything wrapped up and eating with your hand – it can be difficult for picky eaters.

Description

For the kofte:
- 500g 5% beef mince
- ½ red onion
- ½ red pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp dried parsley
- Salt and pepper to taste
For the garlic sauce:
- 150g greek yogurt
- 1 tsp dried parsley
- ½ tsp garlic powder
To serve:
- Flatbreads
- Lettuce
- Tomato
- Cucumber
Instructions
- Preheat the oven to 200c and line a baking tray with parchment paper. The tray I used was 33x23cm.
- Add the beef mince to a large bowl.
- Chop the onion and red pepper into very small diced pieces and add to the mince along with the garlic powder, smoked paprika, cumin, parsley and a little salt and pepper.
- Mix well until everything is well combined then transfer to the lined baking tray.
- Press the mixture out so that it evenly covers the whole tray.
- Use a knife to cut the mixture into 8 strips then score each of the strips diagonally.
- Bake in the oven for 12 minutes then pour any juices from the tray.
- This step isn’t essentially but if you want a crispier kofte, place under the grill for another 2 minutes.
- Make the garlic sauce by mixing the greek yogurt, dried parsley and garlic powder in a small bowl.
- Serve the kofta wrapped up in a flatbread with the sauce and any salad that you like.
Notes
Leftovers can be kept in an airtight container in the fridge for up to 2 days and reheated in the microwave.
