    Description

    This easy gluten-free Classic Vegan Artichoke Dip owes its bright flavors to lemon, chives, artichoke hearts and jalapeño.


    • 1 (8-ounce) package plant-based cream cheese, plain (i.e., Kite Hill, Daiya, Miyoko)
    • 1 lemon, juice and zest
    • 1 garlic clove, minced
    • ½ jalapeno, finely diced
    • ¼ cup chopped chives
    • 1 (14-ounce) can artichoke hearts, packed in water, rinsed, drained, chopped
    • Coarse salt, as desired, optional (try smoked or truffle salt for an interesting flavor)


    Instructions

    1. Place plant-based cream cheese, the juice and zest of one lemon, garlic cloves, and jalapeno in a medium mixing bowl, and stir well until smooth.
    2. Stir in the chopped artichoke hearts.
    3. Top with coarse salt, as desired (optional).
    4. Makes about 2 ½ cups (8 1/3-cup servings).
    5. Serve as a dip with whole grain crackers and fresh vegetables; as a spread with toast, sandwich, or pita, or as a condiment with vegan meatballs, veggie burgers, or veggie patties.
