    Dark Chocolate Brownie Layer

    • 1/2 cup granulated sugar
    • 1/2 cup packed light brown sugar
    • 1 stick softened butter
    • 2 large eggs
    • 2 tsp vanilla extract
    • 1/2 cup all-purpose flour
    • 1/3 cup high quality unsweetened baking cocoa
    • 1/4 tsp baking powder

    Cheesecake Layer

    • 8 oz room temperature cream cheese
    • 2/3 cup granulated sugar
    • 1 tsp vanilla extract
    • 1 large egg room temperature

    Make Brownie Batter

    • Add 1/2 cup of granulated sugar and 1/2 cup of brown sugar in a large bowl and mix on high until creamy with the softened butter and the vanilla extract. Mix until combined and smooth.

    • In a separate bowl, combine 1/2 cup all-purpose flour, 1/3 cup cocoa powder, and 1/4 tsp baking powder

    • Add the dry mixture to the egg mixture and mix on a low speed. The batter should be thick. Set aside and make the cream cheese batter

    Make the Cream Cheese Layer

    • In a medium bowl, beat 8 oz. room-temperature cream cheese in a stand mixer fitted with a whisk attachment for 1 minute, until it’s creamy and smooth.

    • Gradually mix in 2/3 cup of sugar and 1 tsp of vanilla. Mix on a medium-low speed until incorporated.

    • Mix in 1 egg at medium-low speed until combined. At this stage, the cheesecake batter will be smooth.

    Assemble the bars

    • Spread half of the brownie batter in the bottom of the pan

    • Add the cheesecake layer

    • Drop spoonfuls of the remaining brownie batter onto the cheesecake filling. Use a butter knife to swirl the batter together.

    • Bake for 40-45 minutes or until the edges of the brownies look set. The edges should be set, but the center can still be a little jiggly once they’re done.
