    There are so many ways to prepare sweet potatoes. You can bake them, boil them, roast them, fry them, or grill them. You can mash them, shred them, cube them, noodle them, or serve them whole. Add them to soups, toss them into salads, include them in bowls, wrap them in a wrap, or serve them as a side dish. (And if you insist, you can also put them in casserole with marshmallows. None for me, thank you.)

    One of my favorite ways to prepare sweet potatoes is to roast them. But how do you roast vegetables like sweet potatoes without oil?

    In this post, I’ll show you the secret to scrumptious (not dry!), oil-free, roasted sweet potatoes. Plus some delicious ways to serve roasted sweet potatoes.

    You are going to love these! They’re tender and sweet and savory all in one bite. Yum!

    Roasted Sweet Potato Recipe tips

    Here’s how to make your oil-free roasted sweet potatoes turn out amazing.

    1. Cut them into small cubes.

    I like to cut the sweet potatoes into small (3/4-inch) cubes for roasting. Large pieces take longer to bake and, in my opinion, don’t have enough crispy exterior to tender interior ratio.

    2. Use a large baking sheet.

    The vegetables need space (but not too much space 🙂 ). If the pan is too small, the potatoes will steam instead of roast (and they’ll be soggy). They need hot air to circulate around them so they will roast properly.

    A 13- x 18-inch baking sheet or two 9- x 13-inch baking sheets is just the right size for this recipe. (If you do a smaller recipe, use a smaller pan; if the pan is too large for the amount of sweet potatoes, they will dry out and not bake well.)

    3. Distribute potato cubes single layer.

    Again, you don’t want to crowd your sweet potatoes so they can roast well.

    4. Rely on fork test, not time.

    Different sweet potatoes cook differently (depending on size of cubes, variety of sweet potatoes, and age of sweet potatoes). Because of this, use your time as a guide, but also be sure to check your taters with a fork for perfect doneness.

    Roasted sweet potatoes can be served either as a side dish or as a main dish. I have lots of delicious serving suggestions below.

    Should I peel sweet potatoes before roasting?

    Peeling is optional, but I think these roasted sweet potatoes are much better peeled.

    You only need a handful of ingredients to make oil-free, oven-roasted sweet potatoes.

    1. Coconut milk

    (No worries! The sweet potatoes don’t taste like coconut!)

    I use coconut milk in place of oil in this delicious roasted sweet potato recipe. The coconut milk adds a little richness and helps the potatoes roast without drying out.

    2. Seasonings

    A little granulated onion and garlic and salt add wonderful flavor to these roasted sweet potatoes.

    3. Sweet potatoes, of course!

    When shopping for sweet taters, be sure to get firm ones without any soft spots.

    How to serve roasted sweet potatoes? Here are a few of my favorite ways to serve these yummy oven-roasted sweet potatoes.

    In a wrap

    Roasted sweet potatoes are great in a healthy wrap. Place beans or a bean spread, roasted sweet potatoes, spinach and/or cilantro, onions, and garlic in your wrap/tortilla. Spoon on a sauce or dressing or this healthy Soy-Free Non-Dairy Sour Cream. Wrap it up and enjoy!

    With tofu scramble

    Oven-roasted sweet potatoes are the perfect accompaniment for this scrumptious Veggie Tofu Scramble. Serve the sweet potatoes on the side or mix them into the tofu scramble and serve in a healthy wrap.

    As a side dish

    Roasted sweet potatoes are the perfect side for slow-cooked beans.

    They’re also great alongside veggie burgers.

    In a bowl

    Combine roasted sweet potatoes with brown rice or quinoa. Add black beans or lentils, maybe some fresh salad greens or cilantro, and a yummy dressing or sauce.

    In a burrito

    Prevent your screen from going dark

    • 25 ounces (about 3 average) sweet potatoes
    • 3 tablespoons unsweetened, full-fat, canned coconut milk
    • 1 1/4 teaspoons granulated onion
    • 1 teaspoon salt
    • 3/4 teaspoon granulated garlic
    • Peel sweet potatoes and dice into 3/4-inch cubes. You should have about 4 ½ cups diced sweet potato. Place in mixing bowl.

    • Preheat oven to 425°F.

    • Line one 13- x 18-inch baking sheet or two 9- x 13-inch baking sheets with parchment paper and lightly oil.

    • Add coconut milk to sweet potatoes. (Don’t worry, your sweet potatoes won’t taste like coconut.)

    • Add seasonings and stir very well to thoroughly combine.

    • Distribute sweet potatoes single layer on prepared baking sheet.

    • Bake at 425°F for 35 minutes. Stir, return to oven and continue baking for an additional 10 to 15 minutes or until lightly browned.

    For extra moist roasted sweet potatoes, cover baking sheet with foil in the last 5 minutes of baking.
