    Salmon balls

    Ingredients

    1 can (14.75 oz.) canned salmon, boned and skin removed
    ½ cup cracker crumbs or crushed shredded wheat, corn, or bran flakes (divided)
    1 small onion, finely chopped
    3 large eggs
    ½ teaspoon baking powder, leveled
    1 large stalk celery, finely diced
    ½ cups instant mashed potato flakes
    ½ cup shredded Cheddar cheese
    ½ teaspoon chili powder
    ¼ cups extra virgin olive oil

    Instructions

    1. Remove the skin and bones from the canned salmon and place it in a mixing bowl.
    2. Add the eggs, finely chopped onion, finely diced celery, baking powder, half of the cracker crumbs (or crushed cereal), potato flakes, chili powder, and cheese to the bowl.
    3. Using a heaping tablespoon, scoop out the salmon mixture and shape it into balls in the palm of your hand.
    4. Roll the shaped balls in the remaining crumbs to coat them evenly.
    5. Heat the extra virgin olive oil in a frying pan over medium heat until shimmering. Carefully place the salmon balls in the hot oil and brown them until golden brown on all sides. This takes about 15 minutes.
    6. Serve hot and ENJOY!
