1 small onion, finely chopped
3 large eggs
½ teaspoon baking powder, leveled
1 large stalk celery, finely diced
½ cups instant mashed potato flakes
½ cup shredded Cheddar cheese
½ teaspoon chili powder
¼ cups extra virgin olive oil
Instructions
- Remove the skin and bones from the canned salmon and place it in a mixing bowl.
- Add the eggs, finely chopped onion, finely diced celery, baking powder, half of the cracker crumbs (or crushed cereal), potato flakes, chili powder, and cheese to the bowl.
- Using a heaping tablespoon, scoop out the salmon mixture and shape it into balls in the palm of your hand.
